The Heavensake brand is a collab between french cellar master Regis Camus and some top tier Japanese Breweries. In this case, Asahi Shuzo of Dassai-brand fame. This elegant junmai daiginjo more than lives up to what you would expect from Dassai. Velvety smooth with a restrained and elegant richness, Some tropical fruits and white flower on the nose.
Pairing well with richer dishes – think Toro, truffle, caviar… or all three together on toast points. Let’s just say you could consider this the Patek Philippe of sakes. Gorgeous, rare and perhaps a bit more expensive… but omg worth it!
